Kale & Chickpea Salad

Main Salad

Ingredients:

  • Fresh Kale
  • Roasted chickpeas
  • Ripe avocado

 

Salad dressing

Ingredients:

  • 2 tablespoons of Tahini
  • ¾ cups raw cashews soaked for 6 hours
  • 2 cup tablespoon extra - virgin olive oil
  • 2 tablespoons of Tahini
  • 1 red onion, cut into thin wedges
  • 1 tbs lemon juice or 1 lime juice
  • 2 garlic cloves
  • 1 teaspoon of Dijon mustard
  • Himalayan salt and pepper (as you prefer)

 

Method:

  1. Mix the kale with the salad dressing by massaging the kale into it. Then sprinkle the salad with the vegan parmesan cheese.

 

 Vegan Parmesan Cheese

Ingredients:

  • 50g raw cashews
  • 3 tablespoons nutritional yeast
  • 2 garlic cloves
  • Himalayan salt to taste
